Based in the Detroit, Michigan, area, Brian Fettner is a longtime real estate investor who guides BT Foods and owns and operates a pair of Maverick’s locations. Brian Fettner named the restaurant after his pet Jack Russell, and he contributes a percentage of each sale to rescue organizations in the area.
Among the popular Maverick’s menu items are steaks, pizzas, and fish and chips, as well as two types of taco entrees. Made with a choice of beef barbacoa, crispy chicken, or beer-battered shrimp, the Mav Tacos are lightly grilled and filled generously with fresh diced tomato, cilantro, shredded lettuce, spicy lime aioli, and queso fresco.
Queso fresco is a Mexican cheese formed in a round and traditionally made from cow’s and goat’s milk. With a mild and refreshing taste, it is creamy rather than rich, and has a distinctive salty-sour kick that pairs well with many dishes.
For those seeking flavorful seafood, the Blackened Mahi-Mahi Tacos are served with a similar range of condiments, minus the queso fresco and with an added sweet mango pico de gallo.
